Woke up at 04:00 to a dead snake. This hasn't happened to me in a long time. I must have built it wrong in my haste yesterday afternoon. Anyway.... it's now just on 15 hours in and chugging away nicely at 220 odd, and 184 internal.

I think I'm doing OK. I'm now at just on 22 hours and touching on 192. I'll throttle it a little and try and hold it back to park for a couple of hours if I can. At this stage I still have about 3 hours up my sleeve.

if you're that close, just let it roll, don't fuck w/the temp! it'll come up on its own. ramping the temp will risk it being dry.

What I meant by throttling was to reduce the temp in the kettle by closing the vent slightly. And hopefully getting the internal temp to hold.
