Ideas for pulled pork leftovers

I'm thinking tacos, nachos, tamales, etc.  Any other ideas to repurpose pulled pork for a main dish?

Collard greens, add some to pork and beans, stir fry green beans, pork and refried bean burritos, mix with some salsa verde and serve it over rice, carnitas, quesadillas.

Great ideas guys ...thanks!  We decided on carnitas.  We added some orange juice, some orange zest, bourbon, and cumin, served on a tortilla with all the fixins and OMG they were good!

we've done a LOT of different things with the leftovers

so far my favorites are nachos, bbq fries, and bbq loaded/stuffed baked potato

Search for a recipe for "Buffalo Chicken Macaroni & Cheese" and make it using pulled pork instead of chicken. It's delicious either way. It doesn't use a lot of pulled pork, but you could probably add extra w/out destroying the recipe.

Pulled pork Eggs Benedict. A local diner did it, and it was yummy.

Make real Hollandaise, the package stuff isnt worth it.

No one said pizza? Pick your cheese, go with your favorite sauce, throw some onions on with the pulled pork and bake!

Here probably the best thing I made out of my pulled pork leftovers.




I used some of Rick Bayless taco seasoning packs that my roommate had.


Mixed that with 1-2lbs of pulled pork, 1 can of corn, and some franks hot sauce (thinking back on it, I would do some Shack Sauce instead of franks).  Dumped it into cast iron skillet.

Made some Cheesy Corn Bread (I used a 1/4 of a block of jack cheese I had smoked earlier this year)  and dumped that on the top of the meat in the skillet.

Popped it in the oven (can also throw it on the kettle if you want) and cook till the corn bread is done.  I wanted the corn bread a little bit on the harder side to stand up to the wet mixture of the meat.

I figure you can use any taco seasoning you want with this, just make sure that you add some liquid to the mixture if you are doing a dry taco seasoning.

I need to make pulled pork again so I can make this thing.

Here is another creation I made with some pulled pork leftovers.  It is definitely a man style meal that some might be intimidated by.


Corn cake w/ a little bit of mac and cheese in it(can use just cheese in the corn cake, or even sauteed onions/peppers)  Mac and cheese on top, and pulled pork on top of that.  You can use any bbq sauce or hot sauce you want over the top to finish off.  Another twist to it is to add an egg or two that are cooked over easy or over medium so the yolk runs through the mixture on the top and mixes with the bbq/hot sauce you use.
