Stuff was very soft & fleshy, Started to crack in half when moving it off grill.......I wonder......
There was FOUR different brands of this stuff @ the deli where this was located.....must be a thing.....

I did have some discoloration on this cook, at the point where coals banked......I start off pretty hot to end at the correct cooking temp with the wood shread & it made a weird greenish oblong where the coals were.....semi-drawing board stuff & I'll be using baskets on this dawg..............
