I ordered some thick center cut from a local butcher. Did a reverse sear and cherry wood for some flavor during the beginning. Also made some jalapeņo cheddar corn bread in cast iron. No complaints from the dinner participants.

Growing up in Indiana, all I ever had was jiffy mix that you had to chisel out of glass bakeware. So experimenting with making good cornbread is one of my favorite things.
