I've seen videos Malcom Reed add onion chunks along with wood chunks to his coals during competitions. Has anyone done this before? Was there any noticeable taste difference? I'm doing a butt tomorrow night and thought about trying it.

Seems like I have tried that along time ago. I don't remember if it did anything or not. I usually do a test run on pork chops when I am experimenting with different smoke flavors. Quick and easy

I doubt it flavors the meat as much as it smells great while the meat is cooking.
I've done the same with bunches of rosemary before. Smelled awesome but did nothing to flavor the steak.

So I tried the onions and I couldn't tell that much of a difference but the wife and inlaws said it's the best yet, so I may keep doing it!

It doesn't change the flavor of the meat but it smells really nice while you're cooking. It's a nice trick if you have people in the backyard or you want to make your neighbors jealous.

Don't think I want to waste a good onion. We like to eat them grilled.

Onions are pretty cheap. Another thing to try: next time you cut some onions, save the tops/bottoms/outer layer (the stuff you don't chop/eat) and toss those on (or under) the coals. Works the same.
