Broke out the rotisserie
« on: April 06, 2021, 03:13:39 AM »
I've had the rotisserie for years...I'm guessing at least 20, but I rarely use it.   After tripping over it the other day, I decided to put it to work.    Nothing fancy.  Dry-brined her last night, rubbed some jerk-paste under, and over, the skin and used a single hickory chunk.   I don't know how large the bird is, I'm guessing between 5-7lbs.  It only took an hour and I pulled it when the breast hit 165.   Rested it for 15 minutes and served it up with cheesy bacon grits.

Looks really good, one of my favorite accessories.  I agree, high temps have worked well for me with the roti so far.  And I'm ready for lunch now!

Makes me hungry. I’ve never used the roti, but I want to.
