I'm in the market for some accessories and want to find out what you're using and what you'd recommend. There are so many choices it can be overwhelming. One can only read so many good and bad reviews. Feel free to elaborate on any or all.

- Prices are all over the place, from a few dollars to hundreds of dollars
- I just want one that reads accurately within two or three seconds and will last
Thermometer with four probes for monitoring meat and pit temperatures

Boning Knife
- Wanted to trim up meat in preparation for a cook

- Wanted to slice up meat after a cook
