Beautiful day in the Hoosier state to cook bbq. Broke in the Chief with a brisket. All sides cooked on a statesman.
Homemade Mac n cheese and baked beans

12.5 pre trim. I do trim mine a lot, mostly to create more bark on the point. I usually buy larger briskets but the price of beef is ridiculous now.
