Just got the Performer Deluxe after 30 years of using propane/ natural gas. Pretty much never used coals, and having a few challenges in making sure i use the right amount, but when I did get it right.. the rib eye was spectacular. Looking forward to some good info on this forum.

Welcome from Highland Park, Illinois! Lots of folks here who can provide guidance on charcoal usage - I used to use a full chimney for every cook (no matter what I was cooking) until I saw others use much less and get better results. I've learned a ton and continue to see new things - I've never regretted joining.
