Chicken roulade

Boneless, skinless chicken thighs stuffed with sautéed garlic, onions, and mushrooms mixed with cream cheese, then rolled and trussed.  Cooked for about an hour indirect with lump and peach wood, served with roasted potatoes and spinach.  Thanks for looking!

That looks amazing. This is just the inspiration I’ve been looking for. I really need to try this. As for cooking on the yellow... that’s just showing off and I love it. Nicely done.
