Steak tacos with recipe and pictures update

I was craving tacos so I started marinating skirt steak on Friday for a Saturday grill.  I know some of you use your own homemade or store bought but I thought I tell you a nice simple recipe and what I use to prepare. The following Ingredients are a list of what I use and how I cook it.
 
·        Large container to add all ingredients and skirt steak in for its 24hr bath in
·        4 Lbs Skirt Steak
·        6 Pack of beer I use Corona Extra pour 1 full beer into container drink the other 5 while your prepping the grill the following day
·        2 packs of GOYA Saz󮠳easoning
·        1 tbsp GOYA Adobo seasoning
·        ½ tsp Favorite steak seasoning I use Second City Prime “The Rub”
·        ½ tbsp of garlic Minced or more if you’d like
·        1 Lime ½” thick
·        1 Small Onion Sliced ½” thick

Prep is very easy…
·        Pour the beer, onion, garlic, lime squeeze the lime and drop in rind and all, add the dry seasonings into the container and stir the marinade
·        For the Skirt Steak trim whatever fat and any leftover silver skin that was left on from the butcher and cut into 1” strips and cut about 4” to 6” long
·        Place Skirt Steak into container and mix by hand
·        Place in fridge and shake it every now and then. The following day do the same think in the morning until you are ready to grill
·        I use a full chimney with a 50/50 charcoal split on the grill. I grill it direct and when almost done I place to the cold side to finish
·        I also grill onions, peppers, and corn for the taco
 

I took prep picks and the finished picture but forgot to take pictures of the steak getting grilled

Used leftovers tonight and made pizza and a appetizer of prosciutto wrapped asparagus.

Prosciutto Had enough leftover to wrap some cantaloupe also.👍😎

Neat use of the Kettle Pizza - adding another grate on top.  I had never considered that!
