Tenderloin is so good. It's (big surprise) a very tender, lean cut of pork. It takes seasoning very well and cooks up quick and easy. My favorite way to cook it is to marinate it in tequila, lime, onion, cilantro, and a bit of sugar. Grill it briefly over direct heat for some Maillard reaction, then move it to indirect until it's 140 F internal.
