Don't have a rack..wish I did, but kettle--yep 3-3-3 is the only way for me--kids love them ribs this way.

ISO: Dark red/crimson mist kettle (cooker condition). 18" preferred, but a 22" would be awesome too.

These may be dumb questions...but the ribs don’t come out dryer when you hang them do they? Or do the ribs near the top ever finish sooner (or later?) than the ones closest to the fire?

These were very juicy. They cook completely even except the very bottom bone. It can be dry/burnt.  The fats drip on the coals creating a different flavor from indirect cooking.  I like both ways for different reasons.

Hanging ribs is super easy and with an 18” wsm, you could cook 6 full racks if you want.  Hanging ribs is about the only thing I use my wsm for. I do all my other smoking on the 26.
