Hi, we have a birthday party coming up in a few weeks for our 2 boys. We are doing "pancakes and pajama" so most would think no grill necessary - but not people like us!! I'm looking for a full 22" griddle. Any suggestions? Are they hard to come by?

Ask around in the group if anyone has a Weber griddle grate kit that they might want to sell.
Your other choice ( easier to get ) would be the Lodge pro griddle. It fits in the 22" kettle and just sits on top of the grate!

Anyone have any experience with this: http://www.mojoegriddle.com/shop/mojoe-griddle

If it's 1/4" carbon steel - I can make that.

Think the mojoe griddle will be a bad idea on a performer with the plastic table?

It depends on how hot the griddle is if you set it on or near the plastic table.  I would probably just buy the lodge griddle as it can be used on the grill and in the house.  If you really want to make something that is just for the kettle make sure you design it so there is air flow.  The mojoe griddle wouldn't work good on a charcoal grill because only a little air can escape the bowl.  Most I have seen have a cutout in the center for searing or some openings on the side to allow air flow.

Personally I would buy some quality grill gloves or welders gloves to handle the griddle and anything else with heat.  I wouldn't set anything hot on or near the plastic table.  I have a cheap plastic table I occasionally use as an additional work table and even a sliver of grinded metal that falls off will stick to it.

This year I purchased some grill armor gloves and a couple combo hook/rake to pick up or spin grates or spread charcoal.  I honestly don't know how I got by so long without them.  Way safer when cooking and it makes clean up right after the cook a breeze as I don't have to wait for everything to cool. Links to both are below.

You don't need or want a ton of heat on your griddle to do pancakes or bacon and eggs! I use something around 18-21 coals nicely placed to give even heat and I have used this lots of times and it's perfect!
Here is a photo of my coals for breakfast cooks. For meats or searing steaks you can easily add a row to it.
Ja it will get Real HOT and Stay hot so if you do need to move it.. be real careful and have a good safe place to set it! Or just close the vents and fire up another grill!

I'd like a little more space than what the pro griddle. We have a big family.

Here's another possibility: https://www.homedepot.com/p/Bayou-Classic-20-in-Cast-Iron-Jumbo-Skillet-7438/100387828

You all think a could inches around the sides will provide enough air flow?

That would be a good cast iron skillet for cooks. I have thought about something similar myself. Maybe not the best for pancakes but for everything else it would probably be fine.

I decided to give it a try! Decent reviews on Amazon & the review pics show it being used on a kettle - seems like a good fit.

Any reason why you think it might not be the best for pancakes?

You can do pancakes alright, but the higher side wall can get in the way at times. It should work fine though and you will be able to use it for a lot of different cooks.  Enjoy!

Maybe Use a comal? Typically used for tacos, but you could cook a pancake in the bowl, then keep em warm around the edges?

You could always just by a steel plate on eBay:  https://www.ebay.com/itm/1-4-Steel-Plate-Disc-Shaped-20-00-Diameter-250-A36-Steel-Round-Circle/201988333243?hash=item2f07715ebb:g:HUQAAOSwHnFVnzJF

I bought one to use as a pizza steel.  Holds heat like a mofo  . . .
