Deboned prime short rib plate seasoned with salt, pepper and Chinese 5 spice then rolled and tied. Smoked at 275 to an IT of 155 then braised in miso ginger stock with caramelized onion and garlic with fermented red pepper paste and soy. Broccoli and mushrooms were cooked direct then tossed in oyster sauce cut with a bit of fish sauce, zest and juice of 1 orange and lime. Served over arborio rice with mint and cilantro
