Down here in NC
Barbecue is a noun, really only pulled pork (some wiggle room on the meat nowadays)
Grilling is a verb, more akin to cooking something with fire (probably hot and fast)
A cookout is a noun, an event when you go to someone’s house to eat grilled/smoked meats.
It would sound something like this:
Hey want to come over for a cookout? We’ll be havin’ some bbq and grillin’ some burgers and dogs for the kids. (And everyone would know that by bbq you were talking about pulled pork)

Potsie...one is an acronym, the other two are variations based on geography...proper English vs American English (not saying that American English is wrong).

I like the idea that BBQ means over wood fire while grill means over gas. good and simple way to differentiate for the ignorant masses.

A lot of this comes from regional variations in language. In the deep south, barbecue is smoked meat, served with a selection of sauces. It's cooked on a smoker.  Nobody here, except for northern transplants, refer to *a* barbecue. If you're referring to a the thing you use to cook outside with charcoal or gas, that's a grill (and even what Weber calls it). If you're referring to an outdoor even when grilled meats are served, that is a cookout.
