17 degrees and snow on the ground.. Time to cook some Picanha

So I was sitting around waiting for the Pat's game to start and thought to myself "Dayum, it's freezing outside, but yeah, I need some Picanha.  Pulled out a whole sirloin cap, trimmed and sliced it up, vac packed it and dropped it in a sous vide bath at 130 for 1.5 hours or so.   During a commercial break before half time, I ran outside and fired up a chimney of Weber briquettes and put the roti in place.

After my minimum time was up, during some other commercials, I pulled the Picanha out of the bath, loaded it up on the spit rod, went out and dumped the coals and got to spinning.  When there was a nice crust, I pulled the rod, sliced off the crispy sides, reseasoned and put it back on the roti to crust up again.

Absolutely delicious.





 








Took a couple of videos as well.  My mouth gets watery watching that nice, delicious rendered fat dripping down across the surface of the slices.

I wasn't hungry until I watched this. That looks incredible. No lid?  Did the meat try and cool off in the cold or did the direct heat maintain the internal temp?

Thanks.  I usually leave the lid off when using the Roti, especially with Picanha and direct cooks.    The meat didn't cool off a bit as there was a lot of  heat coming up.
