Birthday cook!
« on: September 08, 2018, 09:31:43 AM »
Sept. 7 was my birthday.  56 yrs old and feeling great!.  Cooked a 9 lb pork shoulder, some turds and some crab stuffed jalapenos and more.  Cooked the pork on my Cajun Bandit Stacker with RO lump.  Yes I said lump.  It performed well and was steady in temp.  Also responded well to temp adjustments.  Just to show that lump is not just for fast cooks.  The pork was done in about 9.5 hours and still had plenty of fuel left over to cook my crab stuffed jalapenos.  Had some friends over and had a great time.  Limited pics because I was busy entertaining.  Also I used butcher paper for wrapping for the first time.  I wrapped at about 165 and then finished to 197.  I can say I like it.  The pork was amazing and retained the moisture and bark.  You guys got to try it.  Some pics...

 :DGreat job...
I always use lump for low and slow long cooks...
Doesn't work so well in a snake but it's excellent in minion cooks...

Looks awesome and happy birthday. I always use butcher paper on brisket but haven’t tried it on pork yet.

I’ve used lump in the wsm a few times. Works great. I don’t get quite as long of total cook time out of a full ring but love the low ash.

I also need to try those crab stuffed jalapeños
