No Vortex? No Problem

I decided to grill/smoke some wings for lunch. I know it's a lot for one person, shut up, I'm fat.

A Vortex has been on my wishlist for a while but I always buy a cheap kettle instead and I keep pushing a Vortex back to next week. I don't care for most gadgets but it's simple, fairly cheap and would get a ton of use from me.

So for no apparent reason (and I'm sure plenty have done this before) I decided to use some Pecan wood chunks as my primary fuel source. I laid a very small bed of lump just to get things going then I added a fist sized chunk of Pecan and waited for it to take off. I let the dancing flame cook my wings for the whole cook whilst burning a very clean fire in the process.

I cracked the lid back about a 1/2 inch so the fire had enough oxygen not to put out my flame. I ran it like this the entire cook and these were the best smoked wings I've ever had. IMHO it's easy to over-smoke chicken but with this method I ran the kettle like an offset burning a wood fire the whole time.

Yeah I could eat that many wings and come back for more...
As much as I love my vortex most of my cooks are done without...

I like the live fire idea with the wings...I think I might see how that works with the vortex...

I just picked one up a few weeks ago for 5 bucks. In the process of cleaning now. Can't wait to fire it up soon because I hate firing up the 22 for a solo cook.

That is not a lot of wings. I could eat twice that many. And then some. Like maybe couple pieces of pieces of pizza...down it with some sweet tea.

Pecan is my favorite choice for smoke. It adds a nice deep color and smoke isn't heavy but noticed. Nice job man.

I finally got a vortex a few months ago. It has replaced a few trinkets. Looks good to me without it!

Don't use vortex for wings either. I like to cook direct also using a stacker. No wasted cooking grate space, everything gets done at the same time without turning or moving the wings around. Flare ups reaching the food is nonexistent as the cooking and charcoal grate are 23" apart.
