I've wanted to do this for a while.  Hopefully they turn out ok.  Salt n Pepper, Kingsford Comp Bricks and couple chunks of cherry.

I've been called the Robin Hood of Weber Kettles.

Those look incredible. I still haven't done those. Do you find those in a regular grocery store or somewhere special?

Thanks!  I bought them at Harris Teeter which is a regular grocery store here in the Carolinas.  I think i will try a specialty butcher next time as I'd like to cook a bigger slab and the grocery stores here cut them down to small pieces.

Those look great!  What was the cook process in so far as temp and time?

Doing some myself for the first time today.  Have been marinating in juice/soy sauce/Worcester/salt/pepper.....and others I forget since friday.  Planning on shooting for 250ish for at least 4 hours?.....sound about right to anyone else?
Its amazing how quickly one weber kettle turns into more than a dozen!  Always open to grabbing something interesting so let me know what you've got!

Thanks!  I ran about 275 -300 for 3.5 hours until internal temp hit 203. I wrapped in foil and stuck in a cooler for an hour.  I would pull them sooner as I think they continued to cook in cooler. They could have been a little juicier but still delicious.  Good luck!

Ask for the whole short rib plate next time you're in Harris Teeter, they should have it. You should also see a price break. If they don't know what you're talking about, ask for a cryo of short ribs.
