I’ve been wanting to experiment with butcher paper to wrap my briskets. I’ve been a Texas crutch foil man for some time. Since I bought 1000 ft worth of paper at GFS, I suppose that makes me committed! I’m also enjoying the GFS $2.99 deal on choice briskets. They occasionally have certified angus, too.

Anyway, it turned out well. The bark was as expected: crustier and more flavorful, Smokey. I was able to retain some aujus to paint my slices, too. Definitely will need to switch to paper for now on.
