First time ribs with my smoking rig.

It has been almost 6 months since the last time i cooked  pork ribs  so i figured  I'll give it a try since my smoker rig project is finally completed.  Planning for a 3-1.5-1 at 260-270F.

At 2 hr mark. Decided to try just 1 stacker for less coal consumption. With the heat shield and diffuser, the added  distance between the coal and food grate is probably unnecessary.  As is, charcoal to food grate is roughly 13" instead of 22.5" if second stacker is utilized.

Blue on duty. New lid n bowl getting called for only the second time.

Looks like my 2 SnS are ready to find a new home or at least go on a semi retirement.  Won't be needing it anymore for smoking.

What's the heat diffuser made from?  Tha's a really slick setup you have going!

Diffuser is 16 gauge ss sheet.   Set up was inspired by the Hunsaker Vortex. Works like a charm.   Outstanding Heat and smoke  consistency at food grate level.  I have 2 other threads out there that featured the diffuser.

Thanks. It turned out a bit darker than i prefer since i used a dark bbq sauce. Ribs were very tender and tasty although i rarely eat any ribs with bbq sauce.  Only cook these things upon request. I like my pork or beef ribs very plain. Just salt, cracked black pepper, red pepper flakes and sometimes with a little garlic powder.
