Cooked some spatchcock Cornish hens today cooked at 400 for 45 min. plated picture didn't turned out too good.

But I bet they were good. Looks like you could just dial the heat back a little and the skin wouldn’t get to dark. Looks good Irv.

They do look good though.
I agree at 350 grate temp
they shouldn't take much more than 30 minutes.
400 is a bit on the high side.

Found a Guinea fowl grower not far from us
and will be trying to reach out this weekend
and score 6 or 8. 2 to cook, the rest for the freezer.
She also has all kinds of other fowl.
Ducks, geese not sure what all.
Kind of exciting.

Cornish are bomb. Stuffed em with celery and onion. Perfect size for a meal. Those look good
