Who has a great pineapple recipe that doesn't include a rotisserie?

I saw somewhere the pineapple was cored, sliced, and the slices were wrapped in bacon, thru the hole, around the perimeter of the ring, then grilled. Shit that looked gooood!
Multiple kettles and WSM's. I am not a collector, just a gatherer... and a sick bastard.

Al Pastor!!! You dont have to roti it. Or make them into kabobs! If you do the standing spit (kinda like a beer can chicken setup), carve it thinly and place on corn tortillas with cilantro, onion, and pineapple (tacos al pastor)

You don't need a recipe. I've used cinnamon and sugar before but it just doesn't need it. That stuff is amazing and never fails to make me look like a grilling genius when I didn't even do anything but throw it on the grill for a bit.

Works well on Chicken kebabs and on its own with cinnamon and brown sugar yum!
