First time Pepper Stout Beef

I used Weber briqs, with some apple chunks to cook some chuckeye until the IT was 163. Kettle temp was 265 or so. Then, I put the chuckeye, bell peppers, onion, carrots, jalapeños, Worcestershire, and Murphy’s stout all in my cast iron Dutch oven. It is now cooking at 350f for another 2-3 hours. We will serve it on some smashed potatoes and roasted cabbage.

I am beyond excited for this meal. My daughter seems to be equally excited LOL

Yummm.   A really cheap cut you can use for this is seven bone chuck.  Around here it's under $2 lb and you get really nice gobs of smoked beef goodness.  I'll ask the butcher to slick it thick at least 3 inches thick.
