Just seeing this.   FWIW, I've made kettle fried chicken wings with success a bunch of times.  I didn't know about this recipe though, I've never done a wet batter.
My method: I cut the drummies from the wing but leave the tips on.   Then sprinkle with kosher salt.  Let wings sit in bowl for an hour or so (in the fridge).  Get the kettle ready with the baskets in the center and a hot fire. All vents wide open.   Pull wings out of the fridge and season with your choice.  (I like Mrs. Dash original, but whatever flavor profile your in the mood for.)  Then I use a brown paper bag, put some AP flour, salt, pepper, and red pepper flakes.   Dump the seasoned wings in and give a good shake.  Then straight onto the grill, around edges.  For about 15 minutes then flip, for 10 min then check for done-ness.
