...  chopped thigh meat, chicharon, garlic, egg, stone ground mustard, roasted hatch chili's, salt and pepper. Wrapped in bacon weave lined with swiss cheese and coppa.  I'll serve it over bacon mashed potatoes with a cheese sauce tomorrow night.

Wow. I don't know what some of that stuff is, but it looks great!  Nice way to season that new CI grate.
