The ambient probe was touching a rib so things were reading low

Noticed a bit more spoke thank normal so I found the issue, grill was over 500 degrees

Fire up the 26er time

Is there a dome thermometer?  What was it reading?

That's a lot of meat. If I ever get another smoker other than weber, I'm going offset.

Dome temp was 400 which usually reads higher than grill temp.

The 26er bailed me out, the shoulder was fantastic but the ribs did not meet my typical standards but were enjoyed by all.

No pics of the end results.

The PitBoss was only 399$ at Costco so compared to a BGE and others it was a good value.
