Spares on the 26er
« on: July 05, 2017, 11:17:39 AM »
You really get an idea of size with 2 full racks of spare ribs. The 26 is ideal for these. I banked coals and had water in the drip pan. Top and bottom vents half. Temp held around 275 for 4-5 hours perfectly. I wrapped for an hour at the three hour mark. Salt and pepper base layer with a light coating of swamp boys rub. Unwrapped, sauced and direct for a few to finish. I think they were my best yet.

@HoosierKettle Did you use charcoal rails or baskets?

Rails in line and the backs of old baskets line the bowl behind the coal. I used kbb and mulberry wood

Looking good! I did the same thing yesterday with my 26. However, I did mine with fuse/snake burn...which I am loving for spares.

Great looking bones ! ! !

I love my 26er.  It's the only thing I cook on anymore.  (Well, 95% of the time anyway.)
