Smoked Vegetables on the WSM

Smoking a couple of chickens today and want to smoke some veggies.  Maybe corn on the cob and potatoes or something else.  Looking for suggestions and best ways to smoke the various vegetables. Thanks in advance.

Directly on the coals. Turn every few minutes until husk is complete blackened

EDIT-I'm sorry. I thought we were talking about grills and grilling. I missed the wsm part.

I don't smoke the corn in the husks. I just grill it indirect until it starts to turn black on the outside.

Maybe I am crazy but I find that the corn gets some sweet flavor from the husk and offers some protection from burning. This was not on the WSM so maybe it is different on the WSM. Maybe the husk stops the smoke flavor.

Sorry I typed that wrong. I keep it in the husk but I just grill it indirect instead of low smoking it.

Not quite as fun as still on the cob, but if you want pronounced smoke flavor, cut it off the cob & set in a basket or on a screen....

IMO you'll get plenty of smoke flavor by grilling the vegetables. I wouldn't smoke them myself. If you want to go ahead with it, leave the corn in the husk and I'd wrap the potatoes in foil. They'll still get smoky.

I usually throw a dozen peeled hard boiled eggs on the grate of my WSM for 20 or 30 mins. Doesn't need much heat, and nothing close to direct heat. 10 or 12 lit briquettes and a chunk of hickory or Apple will do the trick. I think I'll do this again this weekend, now that you got me thinking.

i boil them and make sure their dry. Smoke for 20-30 minutes 250 ish. Turn a nice brown color. Mix the yokes regularly and top with bacon pieces . Delicious and different
