Kabobs, how to?

I've never made beef kabobs before. What's the best way? Slow n Sear?
Hot vortex? Should I cook the veggies by them selves?
Any suggestions?

I usually put a few bricks on the grate and lay the skewers on top of them directly over the fire.
Here's some shrimp/chicken kabobs I did recently.

...surely that would cause quite big flare ups, what with the chicken fat dripping onto the coals, all the time, as they cook?

Be mindful to pair meats and veggies that have similar cook times.

I cook veggies, chicken, and meats each on their own kabobs. I don't let the meat/chicken pieces touch on the skewer. Everything cooks nice and evenly, no cross contamination from chicken.

I use boneless, skinless chicken. No flare ups.

I have never eaten or made a mixed meat and veggie kabob that I thought was that good. I always make them separate.  Not saying it can't be done, but I haven't had much luck. I love making teriyaki pork kabobs.

I don't use anything but the grill outfitted with a charcoal grate and cooking grate and lid. Something different [emoji41]

And bamboo skewers. No cleaning.
