Big Beef Ribs

Hot and fast beef ribs last night on the Weber Summit Charcoal. GF says they're the best she's had. I think they turned out pretty good. Definitely a little different then low and slow, but jury still out on which I prefer.

350-375 indirect with mesquite lump until 195* internal. Very basic, very good. Rubbed with Meat Church Holy Cow rub.

*I put the ribs on while the lump was getting hot and still smoking. Wanted to get as much smoke on them before the temp was high...
