This cook is as much about the kettle as it is about the food....
My Wood Dale 49er gets the call for this cook. When I lived in NorCal, I had a blacksmith friend of mine make up some replacement hooks for old Weber ash pans.
@jcnaz contacted me about getting some of them to restore an old kettle he was working on, and of course I got him a set. Flash forward 2 years - I ended up moving to Arizona and live about 5 miles away from JC! With great generosity, he ended up gifting me the very kettle that I gave him the hooks for.
Kettle karma is a wonderful thing....
Anyway, here is one of my favorite kettles. I put foil on the ash pan to keep it in good shape when I cook:
Start off with some corn cooked over lump:
Used the corn to make some corn fritters. Sweet potato wrapped in foil:
A couple of small fillets. Check out that cooking grate - it is the original and is so much stouter than the grates we get today:
All plated up. Beef Fillets, sweet potato, corn fritter, homemade caesar salad (I always make my own jumbo croutons), drunken fruit (Grand Marnier over fresh fruit), all washed down with a Washington state Cabernet and eaten al fresco:
