I must say, I really like the way the Slow & Sear works, What I'm finding is that it's hot as hell above the charcoal, but is nice and low heat when indirect, It has taken me a few cooks to figure out how it works,,, but I'm liking it a lot.

What has been a nice surprise for me is how convenient it is for non-low and slow cooks. Just stir the ash from the leftover coals, add a mini-chimney of new lit coals, and cook. The charcoal never does all catch, but you get a nice even heat with a great sear at the end, because those coals are just below the cooking grate. I like my slow n sear, too.
