70 deg sunny weekend in mid-February

Kinda rare for mid-Missouri but it means the Weber is getting fired up again.

Pork butts have been rubbed and back in the fridge to prep for an overnight cook.

@Travis - doing great. Hope the weather stays like this until about November. I have a couple/three days in STL the first week of April - need to plan a meet up for dinner or something.

6:30 am update: Everything is just humming right along.





I picked up this SNS as a Christmas gift and it's really doing the job. I added a handful of briquettes before going to sleep, after things were dialed in, and it looks like it will be enough fuel to get to the finish line.

What kind of temps and time were you running with?
I usually do my overnighters in the 26er with a snake, but just picked up a SNS so curious about how it played out with an overnight

Well, this is interesting...



Unboxed a new thermometer and it shows a 40+ degree difference compared to the old one.

WNC - temps ranged from 220-260 according to the older Maverick. May have been a bit warmer according to the new one. Butts went on at 9:30 pm and they're hitting 196 deg IT at 9:00 am.

Maybe just a bad probe with the new therm. The other probe verifies the older therm...

I was going to ask what if you change probes? Also not that many trust them but what does your lid thermometer say? I find in long cooks it will eventually match the Maverick.
