Don't neglect direct

My last 2 cooks were direct the whole time. Chicken breasts last night and cheeseburgers tonight. I set the lower vent to half and leave the top open. Direct over coals can be very rewarding.

I know that the entire art of grilling started with some lizard over direct heat in some distant time BC. Any grillfella should be proficient in it, BBQing is just an extension of the art, as is dutch oven cooking.
Even just doing dogs and brats for a family get together can be great, it is all about the food, simple or not.

and oh, those burgers look great, I need to do a few soon
If we were meant to grill with gas then the garden of Eden would have had a pipeline

I LOVE cheeseburgers direct over lump charcoal! Great, crunchy char with warm pink interior! Toasted sesame seed buns and wickles pickles with mayo and ketchup!!!! Can't beat it!
