Hey all,
Paleo bacon is ridiculously expensive. So I'm making my own. This is my second time doing it and it's great. Here's the recipe I use:

Only differences are that I bag the bellies in gallon ziplock bags and I smoke it with applewood on the ranch kettle. If you have the time and patience, it's a blast to do on the kettle...
