Although we've been inundated with a lot of great looking Christmas cooks... I wanted to quickly share my first attempt at smoking a ribeye roast:

It looks fantastic.  I take the ribs off so there can more surface area of bark attached to the roast itself, but then I don't get to eat the beef ribs that day, i usually eat them a day or two before.  Love your double wheelers BTW.  They look so boss.

Thanks, I'd be lying if I said I wasn't nervous going into this cook, definitely didn't want to screw up Christmas dinner.

@geezer, it cooked much faster than I anticipated; for 11 lbs on an 18"WSM at ~235F I reached an IT of 130F in about 3 hours.  It was a perfect medium rare throughout.

@captjoe06, the ribs were the best part!  After I receive a few more parts, I'll provide a more thorough introduction of the new midget.

That's a first for me. Never seen the ribs wrapped around the roast. That looks really cool!

Called a crown beef rib roast.  Often times you can ask the butcher to cut the ribs off and tie them back on with butcher string to cook them together.  I'm not sure if @Mr.CPHo had the butcher do it or if he did it himself.

@captjoe06, I had the butcher do it, however I think next time I'll do it myself so that I can dry rub all the surfaces and THEN tie it all together.
