Cheese smoke this morning

Smoked some cheese this morning. Just finished up bag and tag after a 4hr smoke.

@Neil_VT00 Yes that is the KP steel and I used GMG Premium Gold Blend since that's all I had.

Cheese has to be both the easiest and best tasting thing I do on my kettles.   Now you just have to test your patience during the wait for the cheese to get good in the fridge!  I did 7.5lbs the other day.

Have you tried pepper jack yet?  That is by far my favorite!

You guys make me wish I was a cheese person... just not that into using it except on a cheeseburger.

@Nate Just asking I know you Smoke for a bit then you need to vacpack the cheese... But for how long? I want to do this but... but not screw the cheese up :o. Any info would be great. Thanks Dan

@Nate - have you ever actually tried the cheese the day you smoke it?  I've always waitied at least 10 days. 

@Shoestringshop - if you were asking about how long to smoke, I usually do 4-5 hours.

@MikeRocksTheRed I have tried the cheese the day I smoked it. IMO, it tastes better after some mellowing time, that's why I wait a week or so before cutting into it. Like you, I smoke for 4-5 hours.
