Bacon wrapped onion bombs.

First time doing onion bombs today. Used a mix of ground Chuck and smoked sausage to stuff the onions. I also added a cube of pepper jack in the middle.

I used Vidalia onion cut the ends off. Slit the onion half then separate the layers. I only used the biggest four layers of the onion.
I had some pork smoked sausage so removed the casing and mixed with the ground Chuck. Season with what ever you like.
Roll in to meat balls and fill one side of the onion layer then place the other layer.
Wrap in bacon and your good to go!
Cook for 45 min. or until 160 degrees. I cooked them indirect heat at 350.

Sounds simple enuff n looks tasty as well...
Lets just say I have acquired a few Kettles.  Big and small.   Vintage and New...  Some say I have a problem.  I find the Kettle, buy the Kettle, USE the Kettle...No problem...
