A few beef short ribs for dinner.

I was happy to find these USDA Choice "Chuck" Short Ribs for about $3lb a while ago. Around here, these are usually $5.99lb. Before trimming, I'd say they were about 3/4lb apiece. I lightly dusted them with Scott's Santa Maria style seasoning and let them rest, while I got the fire going.



For this small cook, the mini was the best choice. Peach and cherry chunks, with Stubb's briquettes for the fuel. The smoker settled in at 260* and didn't vary much at all for the entire cook.



It smelled so dang good, it was hard not to peek. This is after about 4 hours or so...

Time to chow down!



This cook lasted just about 6-hours on the 260* fire. No spritzing, no foiling and I lifted the lid only once for the pics I took at the 4 hour mark. If you can find this cut of beef, I'd highly recommend giving these a go!

I'm no meat selection expert but those looked like they had nice marbling; I can see why they'd cook well. Ugh, I gotta finish the mini I started 12 months ago!
It's the iconic symbol for the backyard. It's family/friends, food and fun. What more do you need to feel everything [is] going to be all right. As long as we can still have a BBQ in our backyard, the world seems a bit of a better place. At least for that moment. -reillyranch
