St. Pattys Entry - Smoked Corned Beef with Slow n Sear

What an awesome weekend. The weather finally got nice enough to pull all the grills out of the shed and to start playing with some of the new accessories I acquired over the winter.  I decided to give my new Slow n Sear a whirl with a corned beef brisket flat.

Loaded up the chambers with charcoal, peach chips and water...



and lit the corner with a lighter cube.  I decided to pull out the antique blower and speed things up a bit.







Seasoned with some pepper and garlic powder...

and got it on the grill.



Once it got going it kept pretty steady between 250 and 270.

By the way, I'm running this on my 26" and it works great. So for those thinking you might need a bigger model for a 26", I don't think it's necessary.

I forgot to time it but here it is just before I foiled it.



And then foiled of course.

Wish I had a meat slicer, but it was still damn tasty!

I boiled one too.  Here's before I added potatoes.


Got to admit this was pretty tasty too.  The smoked one had a pastrami taste while the boiled was more of a traditional corned beef taste.

So I'm definitely giving the Slow n Sear a thumbs up.

Wow, that grilled one is awesome. Tomorrow's my try at that.
It's the iconic symbol for the backyard. It's family/friends, food and fun. What more do you need to feel everything [is] going to be all right. As long as we can still have a BBQ in our backyard, the world seems a bit of a better place. At least for that moment. -reillyranch

Good luck, although you probably won't need it.  They've got so much moisture in them they're tough to screw up.

Oh I hope so. Put it in the fridge to soak last night for a cook today but had to postpone until tomorrow. I'll change out the water tonight.

Looks great! Love that antique blower thingie!!!!!

Not surprised that the smoked one had a pastrami taste.  That's what pastrami is... smoked corned beef.

Antique "Weed-Burner", grill grates, new 26'r, you got it all goin on.   Pics proved you know HOW to cook some great Pastrami; and after all, who'd eat corned beef it the could have Pastrami :)             SJ

I've posted it before so I apologize for anyone who's sick of seeing it but since you mentioned it.  The sayings on the handles are kind of a family joke.  I've got two teenage daughters and I joke that any boy they bring home I'm going to ask them "the question"... Gas or Charcoal (which is what I have on the lid handle).  And then the answer the boy better give... Charcoal (on the bowl handle).  The Damn it is optional.  ;D
