Pizza and Cocktail Mixxx

Todays meal:

Food: ham and pineapple pizza with scratch made dough
Drinks: Paulaner  hefeweizen
Music:  Revco  - Cocktail Mixxx (remix of Cocked and Loaded)

I fired up a full chimney plus a mini chimney with KBB.  Once ready I filled up two charcoal baskets with the full chimney and spread the mini chimney out on the charcoal grate directly under the stone.  If the rear handle of the kettle was 12:00 on a clock face, I had the charcoal baskets clocked at the the 10:00 and 2:00 positions.  The pictures of the temps were taken before I added oak chunks which pushed both temps up about another 100°.  The dough was rolled pretty thin so I ended up taking the kettle lid off and used my aluminum peal to help slide the pie off of the wood one then quickly put the lid back on.  After two minutes I pulled the pie out with the aluminum peal, rotated and slid it back in.  Two minutes later it was done.  The first pie was perfect with leoparding on the cheese (not pictured).  The second one had a little cheese and sauce runoff that stuck to the stone causing it to end up a little deformed but just as tasty. 

This was our third attempt and by far the best.  Next go at it I plan to make sure to have a defined crust edge free of cheese and sauce to prevent runoff and I will add a few more chunks of oak to stoke the fire before cooking each pie after the first one comes out.
