Not a Weber, old combo grill I gave to the Girlfriend's Mom. Blackened some red Snapper in a skillet over coals, and fried some on the side burner. It was a HIT!

I checked the oil with an infrared thermo until it reached 350 then just let it recover in between batches. You develop a "feel" for it after a few cooks and only need to check it once or twice.
