We haven't made ribs in a few weeks so when the grocery store put some real nice looking sides on sale the other day I couldn't resist. Home they came for destined for Saturday nights dinner...
Both racks were seasoned with some 3 Eyz BBQ Rub
The WSM will be in charge of smoking duties this fine evening:
Rather than using a chimney, I recently started loading the charcoal ring right up and then using the gas assist to light the briquettes directly. Saves a little time and since it's a small flame it only lights the center briquettes so its perfect to start off a low n slow cook.
After about 7 min I gave the center briquettes a quick turnover with the tongs and then allowed them to burn for another 10min... almost looks like fireworks in there
Then onto the smoker along with some CI beans and baked potatoes riding down below...
After about 6 hours the ribs and taters were removed from the WSM smelling amazing!
One of the racks had a real large boneless rib tip at the end so it was cut up and then...
Into the beans! Ribs were then foil wrapped and kept in a cooler for an hour or so while the beans thickened up.
Really simple baked taters with a mix of sea salt, smoked sea salt, and fresh ground pepper. So Good!
And here's the plate up. The 3 Eyz rub was very tasty and worth trying if you spot it in your travels!
