Cream cheese, spinach, Prosciutto stuffed chicken breasts

I took some leftover boneless skinless breasts split them and loaded them up with cream cheese sautéed spinach and Prosciutto held all the goodness together with bacon.  Used  a full lit compact chimney of Stubbs poured over half a chimney of un lit. Used some applewood for smoke. Temps held around 350 for 40mins.  Made a honey mustard glaze to finish.   They were phenomenal.

@santrigo  The shape of your breasts is really nice. Did you do butterfly them and roll them up, pound them flat, or just cut a slit down the middle? Mine usually look end up looking like I saved a half chewed chicken breast from the dog and sewed it back together. They taste good but definitely aren't pretty!
