I keep using this pic to show my redheads...
The 2013 Performer is the true workhorse. But, for larger cooks and for smoking they both do heavy lifting.
Typical smoke day:
6am - Pork shoulder goes on Performer Kettle to get smoke for 2 hours...
8am - Shoulder gets moved to the Genesis, right side, with single left burner on low to keep the temp at 225... 3 racks of ribs go on the Performer Kettle to get their turn at the smoke.
10am - Ribs get moved to Genesis to join their close friend, the shoulder... 20-30 chicken wings (marinated in wing sauce overnight) get their run on the Performer Kettle smoke.
Noon - Chicken wings get moved to the Genesis for one hour. Ribs get pulled from Genesis, double foil wrapped, and set aside to rest.
1pm - Chicken wing lunch commences....
Shoulder gets pulled off grill when it gets to temp, then it gets double foil wrapped and reunited with the ribs to rest. Wife makes the homemade mac and cheese, cole slaw, and baked beans... When the sides are ready, the shoulder is pulled, ribs are cut, dinner commences.
