So for our daughters engagement party she ask if I would smoke a whole hog. We do a few a year and I never pass up a chance to smoke one. This one was my best by far. I smoked it for 22 hours belly up. This is the first one I've done belly up but will never do it any other way. Being belly up the skin holds in all the juices and self basted the hog all night
My son was my helper for most of the night.
