@MossyMO  how many coals do you run when doing wings and what's your lid temp sit at? I have a vortex at home and do my wings quite hot I tend to be over 500. Those look great

What is the difference between it and the Weber coal baskets or banking the coals with fire bricks?

i would say about a chimney full of coals, and to be honest we never look at the dome temp...we do them so often now with the Vortex that we just open the vents and roll!

Here's a little different type cookup that shows the coal concentration of the Vortex.....it gets a pretty intense area going......something baskets or banking / piling just can't quite do......

It's time to get a vortex, I'm usually just smoking the wings which is fine but I need to try the high heat method to see what's better.
