First cook since joining

Recently acquired a 57cm kettle and will be used for the first time tomorrow.
I bought a 6.2kilo brisket (11-12lbs) and had the ribs removed and had the meat rolled and spiced in my butchers sexy spice.

Terrible pic I know.
7am tomorrow I'll fire the kettle up using briquettes and cook the roll using indirect heat.
I'm not sure about times but we will eat at 15:00. This should give me plenty time.
I'm adding a drip tray with baked beans,  peppers and hot sauce.
I'll also have cans of water near the coals.

Excited it's 12hours to kettle time.

PS:
This is my ribs being prepped by Willem.
It's really worthwhile having a butcher you trust.

Welcome!  Looking forward to your results - that hunk of beef is a big cook!

No matter what though, promise you will have Willem give us the recipe for "sexy spice".

Meat went on at 8.15.


He's tight lipped about his rubs. Says it's what sets him apart from the others.
He uses an oil with chillies in the bottom. Bloody nice

About halfway in. I think it's 4am in the states, 11am here.
Kettle is happy at 350 and internal temp is 140 on the briskett

It's 2:39 here......dawgs woke me up for no apparent reason.......


Nice looking piece ya got there, 350 "seems" a little high up, but maybe not.........just watch for it being dry around the edges later in the cook & keep in mind the "done" window is narrower the higher heat it's cooked at.....look forward to the finish !!!!!!!


Did you get the plate rib bones also?

Those could be a good cook all by themselves if there's a bit of meat still attached !!!!!

Dropped it to 320ish.
I still have 2hours before it needs to come off to rest. I've got the plate bones with some good meat on it. That will be a good smoke for when my wife is in the UK

All done. Delicious. Edges where almost dried, saved it just in time.
Worth the day around the grill.
